For about six months this year, Downtown Champaign was missing a staple known for its Tex-Mex food and refreshing cocktails. Cowboy Monkey reopened their doors in October with a renewed focus on food and drink and a new look to go with it, rebranded as a full-time restaurant. We spoke with General Manager Ahmad Ibrahim about the changes and he showed us how to make two of Cowboy Monkey’s signature drinks.
